
Fish tacos are one of our favorite casual & fun meals to do at home. If you have the basic fixings: onion, cilantro, good tortillas, and lime then they will be delicious. For goodness sake don’t forget the lime. You can always add a creamy slaw or guacamole, but for this laid back day we kept it simple.
Ingredients:
1/2 cup flour
1 teaspoon cayenne
1 teaspoon Lawry’s seasoned salt
Pepper (to taste)
1/2 lb orange roughy (or other white flakey fish)
6 corn tortillas (fresh if available)
3 tablespoons olive oil
1/2 cup chopped white onion
chopped fresh cilantro
Directions:
Heat 3 tablespoons of oil in large skillet, and throw the tortillas in to quickly fry on each side, until they have a little bit of color. Pat the fish dry with paper towel, mix dry ingredients in a shallow bowl, lightly coat the fish with the flour mixture. Pan fry the fish for 2-3 minutes on each side, until cooked through. Fill the tortillas with as much fish, onion, and cilantro as you like, and squeeze some fresh lime on top. Enjoy!
